Recipe: Homemade Granola
As a dietitian, Im sure you can figure that one of my favorite things to do is buy and try new foods - especially nut butters and cereals! Theres just always something new catching my eye.
This is great, until I run out of room in my pantry.
So - you guessed it. This granola is the perfect concoction of my pantry clean up and using almost empty jars and containers.
And it came out lovely. Just lovely. Enjoy this on top of yogurt or smoothies, or simply by itself! And of course, feel free to add or omit whatever your pantry provides !
1 C Rolled Oats
1 Cup Natures Path Heritage Flakes (like a bran cereal)
1/2 C All Bran Cereal
1/4 C chopped cashews
1/4 C chopped walnuts
1/4 C raisins
1/4 C chopped dates
1 C Peanut Butter (I used Wild Friends' Cinnamon Raisin PB)
1/2 C Coconut Oil (melted)
1/3 C Honey
1 tbsp Cinnamon
1 tbsp Vanilla Extract
1.) Preheat oven to 375 degrees and grease 9 x 11 inch pan.
2.) Mix all ingredients until everything is well incorporated.
3.) Place mixture on pan and bake for about 10-15 minutes. Granola should look slightly toasted on top.
4.) Let pan cool completely and place in refrigerator for 2+ hours.
5.) Using spatula, remover granola and place in air tight container.
