Recipe: Quinoa Primavera with Sausage

You know what I do when I don't know what to make for dinner?

I make a whole grain, a vegetable, and a protein ( that I usually defrost from the freezer - which I recommend you do too, cause busy nights are inevitable!)

And I mix it all up.

And voila! Dinner is served.

Try it! It's totally fool proof.

Quinoa Primavera with Sausage

Serves 2 | 15 min prep time | 25 min cook time


2 large zucchini

1 yellow onion

4 carrots

1/2 cup of white quinoa, (rinse, if not pre-rinsed)

4 turkey sausage links, (I used Applegate Farms)

4 tbsp of olive oil

salt and pepper to taste


Boil water and cook quinoa according to package. (Usually takes about 15 mins)

Heat (medium heat) 2 tbsp olive oil in large pot. Cut zucchini and carrot lengthwise. Cut onion in large slices. Add veggies to olive oil and saute, stirring frequently to prevent burning. You may want to add water as needed to prevent veggies from sticking.

In a pan, on high heat add additional 2 tbsp olive oil and sausage. Sear turkey sausage, turning links until all sides are crisp. Turn heat down to medium and let sausage cook through, about 20 mins. Remove from heat and cut into thick slices.

Add sausage and quinoa to cooked veggies. Season with salt and pepper and enjoy!
