Zucchini + Carrot + Apple Muffins

 How amazing these muffins have made my mornings.


I encourage every household to have muffins on hand.


Like why not? They're delicious, convenient, and nutritious - the trifecta!


Seriously these muffs are super moist and packed with all kind of goodness. Your little ones won't even know they include every food group.


Yep that's right - veggies, fruits, grains, dairy, healthy fats make up these beauties.



Zucchini Carrot Apple Muffins

Serves 6+ | 15 min prep time | 20-25 min cook time


3/4 cup shredded zucchini (excess water removed)

1/2 cup shredded apple (excess water removed)

1/2 cup shredded carrot (excess water removed)

2 tbsp canola oil

2 tbsp milk of choice

1/4 cup applesauce

1/2 cup mashed banana (about 1 large banana)

1/4 cup maple syrup

2 eggs

1 tsp vanilla

1 1/2 cup whole wheat flour

1/2 tsp baking soda

1/2 tsp baking powder

1 tsp cinnamon


  1. Mix first 8 ingredients in a large bowl and stir until well combined.

  2. Add remaining ingredients and stir until just mixed.

  3. Scoop into greased muffin tins.

  4. Bake at 350 degrees F for 20-25 minutes ,or until toothpick inserted into center comes out clean.
