Simply Baked Chicken

Dinner ideas can be so frustrating. I mean we need to think about dinner EVERY NIGHT. It's kind of like laundry. The cycle never ends. 

 

Which is why I think there is nothing better than keeping some basic meals in mind for the nights you just don't want to think. 

 

On those nights, this simply baked chicken is my best friend. This recipe is fool proof and as long as you have chicken and breadcrumbs on hand I promise it will taste good. Go head and giver a try! 

 

Simply Baked Chicken

Serves 6+ | 15 min prep time | 35 min cook time

Chicken parts of choice (hate that phrase, but I don't know any other way) 

(Breast, drumsticks, thighs)

Breadcrumb mixture: Seasoned breadcrumbs, Parmesan cheese,Italian seasoning

2 eggs

Butter

1.) Preheat oven to 375

2.) Prepare pan (sprayed with olive oil)

3.) Whisk egg in medium sized bowl

4.) In separate bowl, mix breadcrumb mixture

5.) Wash chicken, pat dry, and place on cutting board. Trim off any visible fat.

6.) Dip chicken piece in egg and then breadcrumb mixture

7.) Place seasoned chicken on pan and repeat until all chicken pieces are seasoned. Place small pats of butter on top of chicken.

8.) Bake chicken for about 25 min. Flip chicken pieces and bake for another 10 minutes followed by low broil for 1-2 minutes or until crispy.

And voila! Simply baked chicken. I like to serve it either with sides like  potato + vegetable or with a large salad. Enjoy!
