Recipe: Mixed Greens with Chickpeas and Figs
Most salads get a bad rep. More often than not I think it's because they aren’t satisfying. They’re boring. There's just missing something.
This one is not most salads. This salad gets me excited to eat. Definitely a true favorite of mine. The sweetness of the figs, bold flavor of the olives, crunch of the pumpkin seeds, and soft texture of the chickpeas gives this salad some oomph.
Just think, you wouldn't enjoy a sandwich on wimpy bread, or eat noodles with nothing on them right? Salad should be no different. Give it the oomph it deserves!
So lettuce clear our minds, bodies, and most importantly, our plates with my favorite salad recipe!
Mixed Greens with Chickpeas and Figs
2 large handfuls mixed greens
1 tablespoon pumpkin/sunflower seed blend
5-6 dried figs, sliced
thinly sliced red onion
about 6 kalamata olives, halved
1 tablespoon crumbled goat cheese
Dressing: I used balsamic vinegar + olive oil that I kicked up a notch by seasoning with garlic powder, oregano, salt and pepper.
Toss everything together. Fork to mouth. Repeat!
