Colder weather is among us, and honestly I'm excited for the different foods I'll be enjoying!
Time to put my smoothies aside for now, and get back on the hot breakfast train. Oatmeal is a classic, but want to try something different?
That's right! This grain is commonly known for being used as side dishes for lunch or dinner, but simmer it like oatmeal and add a little sweetener, and boom you got yourself a high protein, whole grain breakfast.
Here's the deets:
Blueberry Fig Breakfast Quinoa
Cook time 15 mins
1/2 cup white quinoa (either rinsed or pre-rinsed)
1 tablespoon pure maple syrup
2 tablespoons sliced almonds
4 dried figs, chopped
1/4 cup frozen or fresh blueberries
splash of milk of choice (I used almond)
1.) Cook quinoa according to package directions
2.) When quinoa is cooked and all water is absorbed, place in bowl.
3.) Add the rest of ingredients (as you would like oatmeal) and enjoy!
