Recipe: My Go-to Crustless Quiche
Keep this quiche in your fridge for when the hunger strikes! It makes for a perfect breakfast on the go or mid-day snack.
My Go-to Crustless Quiche
15 min prep time | 30 minute cook time
1 tbsp olive oil
1/2 cup milk of your choice ( I prefer whole milk for this one)
1 cup roughly chopped spinach
8 oz Canadian or turkey bacon ( about 4-5 slices)
1/4 cup freshly grated Swiss cheese
Salt and pepper to taste
1.) Preheat oven to 375 degrees
2.) In a skillet, cook bacon. Remove to a plate. Wipe excess oil with paper towels and in same skillet add 1 tablespoon olive oil. Cook spinach, until it begins to wilt - but not all the way, about 3-5 minutes. Remove partially cooked spinach to a plate.
3.) Whisk eggs in large bowl. and add milk, cooked bacon and spinach. Incorporate grated Swiss cheese.
4.) Transfer ingredients to greased glass dish and sprinkle with salt + pepper.
5.) Bake quiche for about 30 minutes until golden on top.
