Pumpkin Oat Squares

Nothing like a fall Saturday morning spent enjoying yummy baked goods and coffee! Give these squares a try if you're feeling the fall fever like I am!

Ingredients:

1 cup oat flour (I put rolled oats in blender until made into a coarse flour)

1/4 teaspoon salt

1/4 teaspoon baking powder

1/2 teaspoon baking soda

1 tablespoon pumpkin pie spice

1 teaspoon cinnamon

3/4 cup pure maple syrup

1 stick melted butter

1 egg

1 1/2 cups pureed pumpkin


Directions

1.) Preheat oven to 325 degrees and grease one loaf pan

1.) Combine flour, salt, baking powder, baking soda, and spices in a bowl; use a whisk to mix well and set aside.

2.) In large bowl of an electric mixer, at medium speed, beat butter and syrup until just blended. Add egg beating well after each addition. Continue beating until very light and fluffy, a few minutes. Beat in pumpkin.

3.) At low speed, beat in flour mixture until well combined.

4.) Turn batter into prepared pan, and bake for 60 minutes or until toothpick inserted in center comes out clean.

5.) Let loaf cool in pan about 10 minutes, then turn out on wire rack to cool completely.

Now you can just leave it as a loaf, but it's so moist and crumbly that cutting into squares and putting in a tupperware makes it easier to eat. I actually preferred this the next day after is was settled and in the fridge overnight. It reminded me of a baked oatmeal type of recipe!
