Recipe: Comfort Chili

Chili + lots of cheese + cornbread! 😋

I try to keep things on hand to always whip this up for nights I don't really feel like cooking 😵

So simple and so yum! Cornbread came from classic Jiff box (+ can creamed corn), nothing fancy there! 😊

Ingredients:

2 tbsp Olive Oil

2 cans Kidney beans (in juice)

2 packages ground meat

1 large yellow onion, diced

1/2 green pepper, diced

1 Tbsp Cumin

2-3 Tbsp Chili Powder

1 Tsp Cayenne (🔥 )

1 cup Tomato sauce, or enough to cover all the contents

Salt and pepper to taste

Shredded cheddar cheese (for topping)

Feel free to add other add ins (I always like to switch it up) - you can try different peppers, carrots, black beans, or other meats like sausage. Try topping with different cheeses, green scallions, or sour cream.

Serving suggestion: Serve with cornbread or crackers.


Directions:

1.) In a large pot on medium-high heat, sautee onion and green pepper in olive oil for about 8 minutes, until soft.

2.) Add in ground meat and cook until no longer pink. Add seasonings. Add tomato sauce.

3.) Bring contents to a boil and then simmer on low (covered) for about 40-50 mins.

4.) Serve hot with toppings of choice.
