Chili + lots of cheese + cornbread! 😋
I try to keep things on hand to always whip this up for nights I don't really feel like cooking 😵
So simple and so yum! Cornbread came from classic Jiff box (+ can creamed corn), nothing fancy there! 😊
Serves 5+ | Prep time 25 min | Cook time 45 min
2 tbsp Olive Oil
2 cans Kidney beans (in juice)
2 packages ground meat (I used 1/2 ground chicken and have ground beef)
1 large yellow onion, diced
1/2 green pepper, diced
1 Tbsp Cumin
2-3 Tbsp Chili Powder
1 Tsp Cayenne (🔥 )
1 cup Tomato sauce, or enough to cover all the contents
Salt and pepper to taste
Shredded cheddar cheese (for topping)- and I gotta tell ya, when you buy the brick of cheddar cheese and grate it yourself, it's better (and melts better) than the pre-shredded kind!
Feel free to add other add ins (I always like to switch it up) - you can try different peppers, carrots, black beans, or other meats like sausage. Try topping with different cheeses, green scallions, or sour cream.
Serving suggestion: Serve with cornbread or crackers.
1.) In a large pot on medium-high heat, sautee onion and green pepper in olive oil for about 8 minutes, until soft.
2.) Add in ground meat and cook until no longer pink. Add seasonings. Add tomato sauce.
3.) Bring contents to a boil and then simmer on low (covered) for about 40-50 mins.
4.) Serve hot with toppings of choice.
