Recipe: Breakfast Quesadilla




If you've ever heard of the establishment Tropical Smoothie Cafe (TSC), you might think they only carry smoothies (makes sense with the name!), however they also have other offerings including a delish sort of sweet breakfast quesadilla with peanut butter and banana. If you live near a TSC, I highly recommend trying one there just to see what the hype is all about, but if you don't live near one and/or want to recreate it at home, let's go through a copycat recipe.


Ingredients:

  • 1-2 tortilla or flatbread of your choice (ideally big enough to fill and wrap it)

  • Peanut butter

  • Banana

  • Granola

  • Honey

  • Optional: cinnamon to sprinkle on top


Directions:

  1. On your flatbread or tortilla, spread peanut butter all over one side. Add sliced banana and granola. Fold over one half or if using 2 tortillas/flatbread, top with the other half

  2. Warm a pan on the stove, add enough butter or oil to coat the bottom

  3. When the pan is warm, add the folded over tortilla/flatbread (as mentioned, picture a quesadilla) or if using 2, place in it's entirety into the warmed pan

  4. Lightly toast until it's better sealed, golden brown and the PB inside is melty!

  5. Top with a drizzle of honey and optional cinnamon sprinkle

  6. Enjoy!

If you'd like to add more staying power to this meal, here are a few considerations:

  1. Can do 1-2 tortilla/flatbread pieces as above to increase energy density

  2. Add a glass of milk or dairy alternative on the side

  3. Add additional fruit to the side, perhaps a bowl of fruit salad

  4. Make a breakfast meat or meatless alternative such as sausage or bacon to consume with the 'dilla

  5. Consume with yogurt or cottage cheese

  6. Eat an egg of your choice alongside - hard boiled eggs, scrambled, over easy - whatever you prefer!
