A Letter to Processed Foods

Dear Processed Foods,

I have been thinking about you a lot lately, and wanted to reach out. I hope this letter serves to remind you of how wonderful you are, for so many individuals, and for so many reasons. I know you get a lot of flack day in and day out, but just know that I think of you fondly!

I know that many people do not know this about you - that you are comprised of any food “that has been subject to washing, cleaning, milling, cutting, chopping, heating, pasteurizing, blanching, cooking, canning, freezing, drying, dehydrating, mixing, packaging or other procedures that alter the food from its natural state” (1). So yes I am writing this letter to all processed foods, such as pre-washed greens, pre-cut vegetables, flavored yogurts, and frozen fruits too! You include so many amazing things; the bad reputation and misunderstanding is just not warranted.

I find myself reaching for you often. When I want to make a tuna sandwich for lunch, add dressing to my salad, have a bowl of instant oatmeal for breakfast, make a boxed mix birthday cake for a loved one or eat frozen pizza for dinner. There are many eating experiences that you make easier by simply existing.

Thank you Processed Foods for bringing convenience, comfort, affordability, and accessibility to so many foods. I hope one day there is less shame and judgement attached to your name, but until then know that I am one of your biggest fans.
