All Things Pumpkin!

Depending on where you're located, you may be starting to feel the first signs of Autumn on the horizon. Stores are completely stocked with pumpkin everything! From decorations for the home, to coffee, pancake mix, salsa and so much more! Leaning into seasonal flavors can be a really fun way to have some variety added into your day to day food intake. Thinking about this and seeing all of the pumpkin palooza in stores got me thinking of doing a round-up of how you could potentially eat pumpkin flavored items for an entire day (if you want to that is!). Admittedly, this post is more for fun and nobody needs to eat pumpkin all day every day, but more so to showcase all of the unique pumpkin products that are available and hopefully invite some fall fun into your diet.

Breakfast Options:

  • Pumpkin yogurt with pumpkin granola

  • Pumpkin oatmeal

  • Pumpkin pancakes/waffles/French toast

  • Pumpkin bagels with pumpkin cream cheese

  • Pumpkin cereal bars

  • Pumpkin coffee or tea with pumpkin creamer (although remember, coffee is NOT a meal on its own but can be a delicious addition to a nutrient dense brekky!)

Lunch/Dinner Options:

  • Pumpkin soup/bisque

  • Pumpkin chili

  • Pumpkin mac and cheese

  • Pumpkin ravioli or gnocchi with pumpkin sauce

  • Pumpkin empanadas

  • Pumpkin spice salad kit

  • Pumpkin samosas

  • Pumpkin chipotle roasting sauce

Snack Options:

  • Pumpkin spice flavored nuts or seeds

  • Pumpkin bread, muffins or roll

  • Pumpkin pie dessert hummus

  • Pumpkin cookies/biscotti

  • Pumpkin ice cream

  • Pumpkin crackers

  • Pumpkin yogurt covered pretzels

  • Pumpkin salsa and pumpkin tortilla chips

  • Pumpkin spice popcorn

Also remember many of the above items can be consumed at any meal or for a snack. They are categorized separately for organization sake, but of course you could have a pumpkin cereal bar as part of a snack or a pumpkin muffin with breakfast. Really you could have anything at any time of day, remember there are no "shoulds" when it comes to what sounds good and what's available to nourish yourself. For reference, most of these items are available at Trader Joe's, Costco and/or Aldi, but check your preferred local grocer to see what you can find! Happy Pumpkin-ing!
