Recipe: Sushi in a Bowl




If you’re a sushi fan and have ever wanted to be able to make it at home without needing to master the skills of sushi rolling here’s a recipe for you! Oh and did I mention you can make most of it in an air fryer and microwave? (If you’d like/have those appliances accessible, so it’s pretty simple recipe).


Yields 2 servings

Ingredients:

  • 2 servings of microwave rice of your choice

  • 8 oz of salmon, cut into cubes

  • Veggies of your choice, suggested: cucumber, carrots, avocado and/or mini peppers

  • Sesame seeds, soy sauce for garnish (optional)

For spicy mayonnaise:

  • 1/2 cup mayonnaise

  • 2 tbsp Sriracha

  • 1 tsp sesame oil (optional)

Prep:

  • Cut the salmon into cubes of equal size

  • Toss salmon in oil of your choice and salt and pepper to taste

  • Air fry until cooked to internal temperature of 145 degrees Fahrenheit. If you do not have an air fryer, you could bake or cook on stovetop

  • While salmon is cooking, cut vegetables of your choosing into bite sized pieces (no need for perfection, just picture what would be feasible to eat with your bites of food!)

  • Prep spicy mayonnaise as per above

  • Follow instructions for microwave rice

  • With all components cooked/prepped, assemble a bowl to your preference. Drizzle spicy mayo over the fish and vegetables with additional soy sauce and sesame seeds (optional)


For a plant-based option this would also likely work great with tofu prepped in a similar way to the salmon! When followed as above, this recipe comes together in around less than 20 minutes; it’s a great use of little time as you can prep different aspects while the fish cooks (and seafood cooks fairly quickly so the prep time isn’t long)!
