Recipe: Spinach and Ricotta Lasagna Roll Ups
Some mornings I wake up without a clue what to make for dinner.
Other times I wake up with a craving for something and I know what will be served that evening.
These lasagna roll ups were one of those things. I must have been subconsciously dreaming about them, LOL.
Feel free to add/ eliminate any of the ingredients to make it your own, but let me say these turned out damnnn goood :)
Ingredients:
1 box Lasagna sheets
4 cups whole milk ricotta
2 boxes frozen spinach
2 teaspoons Garlic powder
Salt + pepper to taste
1 - 1 1/2 cups Tomato Sauce
Parmesan Cheese to taste
Mozzarella Cheese for topping
Directions:
1.) Preheat oven to 375 degrees. Boil water and cook lasagna noodles according to box instructions. Run cold water over them when done cooking for easy and safe handling. Place on flat surface.
2.) Defrost frozen spinach and be sure to remove as much excess water as you can.
3.) In a bowl, mix ricotta cheese, garlic powder, salt, pepper and spinach until well combined.
4.) Prepare your baking pan by placing some tomato sauce on the bottom. ( The lasagna noodles will be placed on top).
5.) Using a spoon, spread the ricotta mixture on each lasagna noodle and roll up. Place in prepared pan.
6.) Add more sauce to top of lasagna noodles and sprinkle with parmesan cheese and shredded mozzarella. They are ready for the oven!
7.) Bake for about 35-45 minutes, and broil for an additional 5 minutes so the cheese gets perfectly melty!
8.) Remove from oven and serve hot! I served mine with meatballs and thought they went great together. Enjoy !!
