Recipe: White Beans + Tomatoes
This is one of my favorite side dishes. It requires minimal work, but the flavors are always super satisfying.
Another option: I have also had this as its own entree and added broccoli rabb and crumbled sausage. Lovely!
Ingredients:
2 tbsp Olive Oil
2 cans small white beans, drained
For tomatoes: either one 12 oz can stewed tomatoes, or 1 plastic container of cherry tomatoes (sliced in half)
3 cloves garlic, smashed
1 shallot, chopped
Salt and pepper to taste
Serving suggestion: drizzle with extra virgin olive oil, top with parsley, add parmesan cheese, and crushed red pepper before serving
Directions:
1.) In a large pan on low-medium heat, sautee shallot and garlic in olive oil for about 5-8 minutes, until soft, stirring frequently. If you need to add more liquid, add either some water or chicken broth
2.) Add in tomatoes, cook for about 5 mins.
3.) Add in white beans, cook for another 5 mins
4.) Serve hot
